There are always numerous classes and projects it seems going on in the Scrapbooking/Paper crafting/Memory preserving world these days. I've got friends who are in so many different classes or groups that it's hard to keep track of all of them and what they all do.

Follow Up for February Fitness

I was going to post updates on my February Fitness but then I got sick and things all kind of went to....well, you know. I did finish my goal though. With the exception of the day I got my root canal at the beginning of the month, I had at least 30 minutes of physical activity 28 of the 29 days this past month!

I am hoping to keep it up in March. I haven't worked out every day, but I have got it in when I can. Due to my cold, I wasn't able to hit as many Zumba classes near the end of the month as I was doing at the beginning of the month, but we'll get back on a good schedule.

I also am down 4 lbs! Well, I was down 4 lbs in the middle of February but I haven't weighed in since. I am hoping to in the next week or so, so hopefully I will have more good news.

So other than the working out and weight loss, I just got back from a scrapbook retreat with friends. I am going to be taking a few photos of the layouts I made and posting them here over the weekend, so make sure to check back for those.

Hope everyone is doing well. I am FINALLY past this cold that has been kicking my butt for almost the last 3 weeks and it feels good. Have a good rest of the week!

February Fitness Update

So, we are one week into February and I thought I would post an update on how I am doing with my goal of working out every day this month.

Wednesday February 1st -  I started the month off easy with a trip to my gym. I did a little on the bike and on the elliptical machine. I fell just 5 minutes short of my 60 minute goal, but I went and worked out and isn't that what this whole February Fitness was about?

Thursday February 2nd - I bought a LivingSocial deal for  Diamond Dance and Fitness, a local place that offers Zumba and other aerobic type classes and ballroom dancing. I had taken a couple of Zumba classes but decided to try one of the other classes and went to a Hip Hop Fitness class. WHOA! It totally kicked my butt, like do-you-think-I-can-leave-halfway-through-the-first-song-and-no-one-will-notice kicked my butt. I stayed though and pushed through it and I am SO glad I did.

Friday February 3rd - I had planned on going to a Zumba class this evening but after speaking with my Mom, I decided to go on a 90 minute walk with her instead since it was such a wonderful evening.

Saturday February 4th -  I went to a Zumba class in the morning, after I had already been up and did my weekly grocery shopping.  By 10:30 I was exhausted but glad to have all my errands and chores out of the way.

Sunday February 5th - We have been having unseasonably high temperatures here in Ohio for February, so I took advantage of the nice sunny weather and went to a local park and walked for 3 miles (60 minutes).

Monday February 6th - I had a dentist appointment this morning. They were going to put me under to have a root canal done but were out of the oxygen that they needed so they decided to delay it until Wednesday. I did get a 30 minute walk in though, which was good.

Tuesday February 7th - The Husband had a movie screening to go to that I wasn't interested in seeing, so I went to a late Zumba class and danced my way through a heart pounding (and hip shaking) 60 minutes.

Wednesday February 8th - NOTHING. I KNOW! I am a little bummed that I have already broken my goal to work out each day this month. I went back to the dentist this morning and they did have the nitrous oxide and were able to sufficiently put me out during my root canal. I am glad to have it done and over with but it has left me pretty out of it for most of the day. This blog post is probably the most I am going to be doing all day, I already hear my bed calling me back to it...."Christina...I'm waiting for you. I have the heated blanket on". Doesn't every ones bed call to them? Or turn on the heated blanket? I have a very nice bed.

So that is the update for the last week. I have a busy weekend coming up so I will have to use some fancy time management to make sure I am getting my workouts in, but the plan is to continue.

I am also hoping that I will have some crafty things to share with you after the weekend.

February Fitness

I have been on a weight loss journey, well, what feels like my entire life. That's not true of course. I have actually been on a real weight loss journey since Labor Day. Between Labor Day and Thanksgiving I lost 20 lbs. It's a great start.

Then the Holidays arrived....

Since the holidays have ended I have had a little trouble getting back on the right path with my healthy eating and working out and I thought that I would start February 1st refocused and reenergized. I'm even joining in with Cathy Zielske's Move More, Eat Well 2012 (more about that in a later post).

As a way to help myself get back on the right track, I have made a goal to work out a least 30 minutes a day (I'm shooting for 60 minutes) for the entire month of February. Whether it be at my gym, taking a Zumba class, playing a game on the Wii...anything really that is getting me up and moving when I normally wouldn't be.

I am sure this might be difficult and there might be days when I would rather come home from work and take a nap (there are LOTS of those types of days), but I am hoping by putting it out there and sharing this goal with everyone that it will make me more accountable. I'll probably update here once a week on my overall progress and I plan on tweeting daily about what activity I did and how it went.

I was feeling so-so about heading to the gym after work today but on my way out another employee had told me that it looked like I had lost weight and asked if I was I trying to. I thanked her profusely and told her that I have been working on it and her saying that was just the motivation I needed. I did 30 minutes on the bike at the gym and 25 on the elliptical machine. Not quite at 60 minutes, but I have a hour long Zumba class the next two days, so that should help.

Summer Time

Summer time. A time when the evening seems to go on forever, the weekends are spent running from one activity to the other, pretty much from dawn to dusk, every week a new summer most-see movie comes out, and hours are spent in the car traveling from to see families spread all over the country.

What does this mean for blogging? Unfortunately, it means for me that blogging has taken a back seat, again. I have been struggling getting into a grove of posting on a regular basis, but I am hoping to start to be able to now and stay in it. For the last two months, I have been helping my husband with his blog and getting things with it sorted out. The local scrapbooking store I worked at closed and I was focused on reorganizing my room with all the fun finds I brought home. I completed the Soul Restoration I class, which I took time to focus on me and step back from other things. All of these things have me back here, ready to refocus my efforts on my blog and my store, my mind and journal over flowing with ideas and things to try.

It's Harry Potter week in our house hold. Evenings are spent discussing the newest film, the books, and a future trip to Universal Studios to visit the Wizarding World of Harry Potter. This weeks Tasty Tuesday will actually be a Tasty Thursday post that will be up while I am sitting in a double feature of Deathly Hallows part 1 and then part 2 at midnight.

On Friday I will be introducing a new weekly feature I had mentioned a few months ago and that I have been getting ready to post on here, so I am looking forward to that. I have a weekend trip planned later this month that I will be sharing with you, and all other sorts of things.

I hope everyone is having a very lovely summer, I know I am. You can tell by my lack of blogging :)

Tasty Tuesday


Finally! A new Tasty Tuesday. I know this series has been hit and miss with consistency lately, and I sincerely apologize. My home life should be evening out a bit and hopefully I will be able to get back to posting something new every Tuesday. 

This week we are making...


Crispy Oven Fried Chicken courtesy of Tasty Kitchen


The ingredients you will need are:
  • 3 lbs. chicken
  • 1 tbsp. Olive Oil
  • 2 tsp. Kosher salt
  • 1 tsp. black pepper
  • 1 1/2 cup flour

I love this chicken. I like to buy as much organic and natural food as possible and I love this chicken that comes from right here in Ohio. The cute cartoon chicken on the package doesn't hurt. He doesn't know the fate that all these chickens are meeting probably. 

Preheat your oven to 400 degrees.

















You will first want to rinse off all the chicken and pat dry. 



Now to get ready for the oven. First, I find it easiest to place your flour in a large ziplock bag. 



You will want to sprinkle the salt and pepper over all your chicken pieces and drizzle it all with olive oil. I just drizzled it all over the chicken and then tossed them all together to make sure all the pieces were covered. 

You will then want to drop a piece of chicken in your bag of flour, just one at at time, and shake to make sure it is evenly coated. Shake off excess flour and place on a baking sheet.


This is what they should look like right before you pop them in the oven.

About 30 minutes into cooking (it should cook about 45-55 minutes total), you will want to use a basting brush and brush each of the pieces of chicken with the drippings from the bottom of the pan or you can just turn them over. I did both.

The chicken should come out golden and crispy, just like if you had fried them the old fashioned way!

They were a hit with my not-a-huge-chicken-eater husband, so that speaks volumes of to me. The next time you are in the mood for fried chicken but don't want to go through all the actual frying (and want something a little less greasy), I recommend giving this one a try!
